Shake It Till You Make It: The Tropical Lunch Hack You’ll Crave

Move over boring lunches there’s a new recipe in town. Imagine tender mango & coconut chicken mingling with crisp peppers, juicy tomatoes, and just enough creamy salad dressing to make your tastebuds do a little happy dance. One quick shake and you’re basically eating a holiday in a bowl, minus the sunburn. Fresh, colourful, and ridiculously easy, this is your fast-track ticket to lunch you’ll actually look forward to. Simple follow the instructions below to create your very own mouth tantalising summer salad.

Tropical Mango & Coconut Chicken Shaken Salad

Servings: Salad bowl portion serving 1-2 people (As shown in the image) 
Prep time: 10 minutes

Ingredients:

  1. Dressing
    • 4 tbsp of salad cream
  2. Crunch & colour
    • 1/2 each x3 mixed peppers various colours, diced
    • ¼ cup cucumber, sliced
    • 1 Spring onion or red onion, finely sliced
  3. Tropical protein layer
    • 2 Sainsbury's mango & coconut chicken breasts, chopped
    • 2 slices of fresh turkey, sliced (soaks up flavour from chicken)
  4. Fresh sweet-savoury mix
    • 1 whole salad tomato, chopped
    • Grated cheese (goes well with tropical-sweet chicken)
  5. Greens & creamy topper
    • Sliced lettuce, torn and sliced
    • 4 tbsp of coleslaw (adds crunch + creaminess)

Instructions:

  1. Add the salad cream to the bottom of the bowl.
  2. Layer in peppers, cucumber, and onion for the crunch barrier.
  3. Add the mango & coconut chicken, followed by turkey so the turkey absorbs some of the flavour.
  4. Add tomatoes and cheese.
  5. Top with lettuce, then the coleslaw.
  6. Seal and refrigerate.
  7. Shake well before eating (Kardashian style) the mango flavouring from the chicken and salad cream dressing will coat everything with a creamy, tangy-tropical taste.
